Then, it's time for the starter...
When you come to Charente-Maritime, you can't leave without having tasted the famous Marennes-Oleron oysters, grown near Saintes, true muses of Charente!
Continue your tasting, with a Charente speciality, impossible not to mention: the Charente cricket!
This dish, composed of the lean parts of the pig, is browned, seasoned and cooked for at least 5 hours in its juice. Yes, you read right, 5 hours!
You can eat it cold on a nice slice of fresh bread, or with oysters and garlic, as is the tradition in Charente.

It would be a shame not to try the traditional Galette Charentaise, from Saintonge. Soft and creamy, this dessert is flavored with the emblematic plant of the Poitevin marsh: angelica. A delight!
